| Chicken with apple and blue cheese sauce |
| Serves 6 portions |

| 100 mls Gusto tart apple syrup |
| 1/2 lemon |
| 500 mls Chicken stock |
| 200 mls White wine |
| 1/4 small Red onion fine dice |
| 50 mls White wine vinegar |
| 300 mls Cream |
| 50 gms Strong blue cheese |
| 1 Garlic clove fine dice |
| 1 Fresh thyme sprig |
| 1 Red Delicious apple |
| 6 Chicken breasts size 14 (skin removed and trimmed) |
| Grapeseed oil |

| 1. | Combine stock, wine, onion, blue cheese, garlic, thyme, and vinegar in a heavy bottom pot and reduce to a syrupy consistency over medium heat. |
| 2. | Add cream to reduction and gently simmer until it begins to thicken. Remove from heat and reserve. |
| 3. | Heat oil in a frypan over a moderate high temperature. Season chicken and saut until brown on both sides. |
| 4. | Remove from from heat, squeeze lemon juice over the breasts and pour apple syrup over. |
| 5. | Cover with tinfoil and cook in a preheated oven @ 180 C until just underdone, remove from heat and allow to rest for 5 minutes. |
| 6. | Cut apple into matchsticks and place on plate. |
| 7. | Top with chicken and pour over strained sauce. |
| 8. | Drizzle out thin line of apple syrup around plate. Serve at once. |
