| Apple Pancakes with Bacon and Sweet Apple Syrup |
| 4 portions |
| Sunday morning breakfast, the newspaper, and coffee. |

| 300 mls Gusto Sweet apple syrup |
| 4 medium tart apples, braeburn or granny smith |
| 2 cups Sifted self raising flour |
| 1 cup Castor sugar |
| 1 tsp Baking powder |
| 8 Eggs |
| 2 cups Milk |
| 25 mls Lemon juice |
| 25 gms Melted butter |
| 4 Rashers bacon |
| Clarified butter |
| Cinnamon sugar |

| 1. | Sift the dry ingredients together. In a separate bowl beat eggs, add milk, lemon juice, and melted butter. Pour into dry ingredients and combine until well mixed but not over beaten. |
| 2. | De-core apples and slice into thick slices, roll in cinnamon sugar and grill until golden. |
| 3. | Melt butter in a large flat frypan and pour mixture onto pan. Allow three pancakes per person. |
| 4. | Grill bacon and keep warm. |
| 5. | Layer pancakes and top with bacon and three rings of apple per person. |
| 6. | Drizzle with syrup and sieve icing sugar over. |
| 7. | Serve immediately. |
