| Bitter Sweet Apple Chips |
| (Makes 20-25 chips) |
| Great as ice cream wafers or crackers with pate. |

| 125 mls Gusto Tart Apple Syrup |
| 1 cup of caster sugar |
| 2 Cups Water |
| 1/4 Cup Freshly squeezed lemon juice |
| 20-25 Thinly sliced apple wafers (Granny Smith's are great for this recipe) |

| 1. | Bring sugar, water, apple syrup, and lemon juice to a simmer. |
| 2. | Add the apple slices and simmer in the syrup for 10 minutes or until translucent. |
| 3. | Gently remove the apple slices one at a time, and lay them flat on a sheet of baking paper. |
| 4. | Bake at 225 C for 1 hour, or until the apples are thoroughly dry. |
| 5. | Carefully transfer the chips to a cool rack. |
| 6. | Store in an airtight container at room temperature. |
