| Apple Syrup Cake |
| 6-8 slices. Delicious served hot with vanilla ice cream on the side. |

| 250gms softened butter |
| 1 grated apple |
| 2 eggs |
| 2 cups flour |
| 1 1/2 cups sugar |
| 1 1/2 tsp baking soda |
| 1 1/2 tsp baking powder |
| 3/4 cup milk |

| Topping |
| 3/4 cup tart apple syrup |
| 1/4 cup sugar |

| 1. | Beat the butter and sugar until creamy. |
| 2. | Mix in the grated apple and eggs. |
| 3. | Sift flour, baking soda and baking powder into the creamed mixture, then blend in the milk. |
| 4. | Turn into 23 cm lightly greased and floured cake tin. |
| 5. | Bake 180 C for 40-45 minutes. |
| 6. | Remove cake from the oven and pour the topping over the hot cake. leave in the tin to cool down. |
| 7. | Topping |
| 8. | Gently warm the tart apple syrup in a heavy saucepan and stir in the sugar until dissolved. |
| 9. | Leave to cool. |
